Pure Mushrooms Soup
PURE MushroomS soup
Our home made Pure Mushrooms soup is a warming dish for the winter days. We used a combination of Swiss and white mushrooms, which gives the perfect balance of a rich taste. Add some herbs and enjoy this delicious dish!
Preparation Time: 20 minutes
Serves: 4
Ingredients
3 tbsp of olive oil
1 large onion - diced
1 leek - trimmed, washed & finely sliced
4 cloves of garlic - minced
500 gm of Swiss/white mushrooms - sliced
1 tsp fresh thyme
1 ltr vegetable stock
1 tsp balsamic glaze, or to taste
sea salt & black pepper to taste
chives - chopped
method
Heat 2 tbsp of the olive oil in a large pot over medium heat. Add the onion and sauté for 3 minutes until caramelised. Add the leek and stir for 3 minutes. Add the garlic, fresh thyme and mushrooms (reserving some mushrooms for garnish) and cook for 5 minutes or until golden. Add vegetable stock and bring to boil. Reduce heat and simmer for about 5 minutes.
Meanwhile:
Add 1 tbsp of olive oil in a frying pan over medium heat. Then, add the reserved mushrooms and fry for 1 minute. Add the balsamic glaze and cook for 2 minutes, turn the mushrooms and cook for another 2 minutes. Set aside.
Blend the soup until smooth and creamy. Add sea salt and pepper to taste. Serve and garnish with the balsamic mushrooms and chives.
