Toast

with eggs, mushrooms, avocado & leg ham

Start you day healthy with this satisfying breakfast.

Preparation Time: 20 minutes

Serves: 2

Ingredients

  • 2 eggs - poached or your preferred way

  • 2 slices sourdough bread

  • 1 avocado - sliced

  • 1/4 cup of parsley

  • 2 tbsp butter

  • 200 gm of Swiss/white mushrooms - sliced

  • pinch of sea salt & black pepper

  • 2 slices of leg ham

Method

Heat 1 tbsp of butter in a frying pan over medium heat. Add mushrooms, sea salt and black pepper. Fry until golden and transfer to a plate.

Then, fry leg ham in the same pan. Start cooking eggs your way.

Meanwhile:
Toast your bread and spread with butter. Add avocado, eggs, mushrooms, leg ham on the toast and garnish with parsley.
